If someone has agreed to cover for you, yes — it keeps urgent matters moving and spares your inbox a pileup. Clear it with them first, then enter their name and email exactly as you want them to appear in the urgent-contact line.

why doesn't my backup contact appear in the reply

The contact is only used inside the urgent-contact line, so if you uncheck "Include urgent-contact line", whatever you typed in the contact field is ignored. With the box checked but the field empty, the message falls back to a generic "please reach out to my team" line.

Skip the specifics. "Out of the office, back Monday, July 8" tells senders everything they need; broadcasting that your home is empty for two weeks is an unnecessary risk, especially since auto-replies also go to strangers and mailing lists.
